Preparing for Hari Raya Adilfitri? Here's a little something that is typically Malaysian!

Durian Rolls

Ingredients
Fillings
250g ready-made durian kueh/ durian cake (freshly made and soft preferable)
Pastry
100g butter
30g sugar
30g fresh cream
200g plain flour
20g milk powder
1 egg yolk for glazing

Method
Fillings: Cut the durian kueh into small pieces
Pastry: In a bowl, cream the butter and sugar and then mix in the cream. Sift the flour and milk into the cream mixture and mix into a dough.
Set the oven to 180 deg. C
Divide the dough into small marble-sized balls. Press it flat and slightly oval. Place the fillings and roll the pastry to your desired shape.
Place the rolls onto a baking tray and brush the surface with beaten egg yolk.
Bake at 180degC for about 15 minutes

Kuala Kedah - a historical port

Kuala Kedah is a small fishing town in Northern Kedah, located at the mouth of the Kedah River

However this little place is a historical port. The town was entrenched in numerous attacks on Kedah during the 17th and 18th century - the Portuguese, the Acehnese, the Dutch and the Bugis. In 1821, a Siamese armada from Ligor attacked Kota Kuala Kedah and Kedah fell to Siam.

Today, Kota Kuala Kedah (the fort) stands as a reminder of the town’s eventful past.

Kuala Kedah is also a major ferry terminal for travellers to Pulau Langkawi. You can also travel from here to Pulau Payar on a booked passage.

To reach Kuala Kedah, exit the PLUS expressway at Alor Setar and travel by the trunk road westwards about 13km.

1) You have 2 option in terms of mode of travel - by air or by road plus ferry....How to get to Kedah here.

2) If you travel by road, you can cross to the island from 3 ferry terminals - (a) at Kuala Kedah, Kedah, (b) in Kuala Perlis, Perlis and (c) from Penang island. You have to prebook speed boat if you travel from Penang (furthest distance by ferry), but from Kuala Kedah and Kuala Perlis, there are ferries every half hour or hourly (depends on time) ...details here

3) All ferries takes you to Kuah in Langkawi (the largest town on the island)

MORE than 4,000 people attended Kedah Mentri Besar Datuk Seri Azizan Abdul Razak’s open house at his official residence in Sri Mentaloon, Alor Setar.

Among those who came were Kedah Sultan Tuanku Abdul Halim Mu’adzam Shah accompanied by Kedah Sultanah Tuanku Haminah Hamidun and several other royal family members.

The 'balik kampung rush' is here again. Malaysians is expected to rush back to their home towns from 17, 18 and 19th of September 2009. Hari Raya is expected to be on 20th September.

There are buses or coaches from Singapore, Thailand and major cities in Malaysia (KL, Ipoh, Johore Bahru) to Kedah. You can be sure that buses are fully booked.

First day of Ramadan 2009 was on 22 August 2009. For Muslim in Malaysia and Singapore, the fast began on Saturday. The month began when Islamic authorities sight the crescent moon that marks the beginning of the lunar month.

Laksa Kedah

Laksa is of Malay origin and is commonly sold all over Kedah. This is certainly one of Malaysia's most popular noodle dish. It is rounded rice noodles (similar to but thinner than Japanese Odon noodles) served with gravy made from fish flakes and rich spices. The dish is garnished with vegetables and is certainly a healthy dish not cooked with oil.

Be sure to try Laksa Kedah when in Kedah!. Kedah Laksa is slightly different from the Penang Nyonya Laksa (see Penang Nyonya Food)- it is less sour and the fish flakes in the gravy is usually blended.

KEDAH plans to open another mango research centre to produce better mango clones. Mentri Besar Datuk Seri Azizan Abdul Razak said the state Agriculture Department had identified an area in Kuala Muda for the purpose. The existing mango research centre in Sala Kanan was opened in 1977. “The area is congested with 512 mango trees. Many of the trees were planted more than 30 years ago,” he said.

Recipes from Kedah

Some great recipes from the northern part of Peninsular Malaysia.

Here's our Simple Ayam Rendang Kedah:

Ingredients
I whole chicken
1 ½ cups santan or coconut milk (freshly extracted from grounded coconut / prepare from 1 cup coconut cream)
1 cup desiccated coconut
3 leaves of limau perut or kafir lime
2 tumeric leaves
2 star anise bunga lawang
5 cloves or bunga cengeh
2 cinnamon stick or kayu manis
5 cardamoms or buah pelaga
2 tbsp brown sugar or gula melaka/merah
Salt to taste

Grounded ingredients:
- 100 gm dried chilies
- 10 shallots
- 10 cm piece lengkuas or blue ginger
- 5 cm piece ginger
- 3 cm piece kunyit or turmeric
- 5 serai or lemon grass

Method
Cut the chicken to bite pieces.
Grind or blend the chilies, shallot, lengkuas, ginger, turmeric and lemon grass with a little water.
Heat oil in a wok/pan/pot. Add the grounded ingredients, star anise, cloves, cinnamon stick and cardamom and fry unit fragrant and the oil surfaces.
Put in the chicken pieces and mix well in the pot. Cook with the lid partially close for about 15-20 minutes. Pour in the coconut milk, kafir lime leaves and turmeric leaves.
Lower the heat and add in the desiccated coconut, sugar and salt to taste and cook for another 5-10 minutes. Ensure that the chicken is cooked and remove the rending from heat.

Bujang Valley Archaeological Site

Not many visitors from outside Kedah, even Malaysian, have visited this part of Kedah, which is the site of the largest archeological findings in Malaysia. It is located near the town of Merbok, Kedah, about 15 minutes drive from Sungai Petani, Kedah.

The Bujang Valley (Lembah Bujang) is an archaeological area that was an area which is the site of an ancient Hindu-Buddhist kingdom that ruled the region from the 4th century AD.

Over 50 Hindu and Buddhist temples or chandis (or candi) have been excavated from various sites in the valley. Artefacts and relics found at various sites, dating back to the 4th century, includes pottery shards, stone statues of Hindu icons, inscribed stone tablets, Song and Ming Dynasties ceramic wares, etc are on diplay at a museum located here. Some of the chandi have been relocated to the museum area.

This is certainly one place every historian studying about South East Asia should visit.

Tropical fruits of Kedah

Its the start of the fruit season in Malaysia. Its the best time to enjoy many of the tropical fruits - rambutan, langsat, dukong, durians, mango, etc. Kedah is a fruit growing state with fruits orchard scattered in the north, south and east of the state. Baling is onf of the major fruit growing district in Kedah. For those travelling through Kedah (and Langkawi) be sure to enjoy the many exotic tropical fruits of the state.
You can buy cheap local fruits at pasar tani (farmer's market) or at stalls just along the roadside in many towns in Kedah.

If you are preparing to visit Langkawi, which is in Kedah, be sure to book your vacation early, especially if you are travelling around the school holidays of Malaysia and Singapore (check calendar of 2008 holidays here). This is the time when many locals travel or take their holidays.
Enjoy your stay during the months of May - August sampling some of these local fruits:

Cempedak is oval in shape and contains many seed covered with a rich flesh. It is eaten fresh or deep-fried with batter.
Durian is an exotic football-sized thorny fruit, also known as the ‘king of fruits’
Jackfruit or nangka contains many seeds covered with bright yellow and fragrant flesh.
Langsat and dokong are marble-sized with a yellowish skin.
Mangoes are commonly grown in Malaysian gardens.
Mangosteen is about the size of a tennis ball and dark purple when ripe.
Rambutan (nephelium lappaceumare) is red and hairy, the size of a ping-pong ball.The fruit inside is white and very sweet when ripe.
Sapodilla or ciku (manilkara zapota) looks like the kiwi fruit on the outside but the inside is brownish, soft and sweet

Ferries to Langkawi, Kedah

The ferry terminals that has daily regular (3 or more) services to Langkawi island are:
1. Kuala Kedah (state of Kedah)
2. Kuala Perlis (state of Perlis)
3. Penang (state of Pulau Pinang)
4. Satun (south Thailand)

For those who drive, to go to Kuala Kedah or Kuala Perlis, exit the toll expressway at Alor Setar and travel by trunk roads. There are special overnight parking in these two places. Its the cheapest and most convenient ferry crossings to Langkawi.

Kedah - Land area of 9,426 sq. kilometres with over 100 islands. It shares a border with the states of Perlis, Penang (Pulau Pinang) and Perak and its northern and north-eastern boundary is the Malaysia-Thai border. There are 11 administrative districts with it own district centres in Kedah. Alor Star (sometimes spelt Alor Setar), the state capital, has a population of about 250,000 (the correct spelling is Alor Star).

Alor Star became capital in 18th century under the reign of 19th sultan, Sultan Muhammad Jiwa Zainal Adilin Muazzam Shah. The town was originally called Kota Setar until 1943 when it was changed to Alor Star. Alor Star is the administrative capital and seat of the state government and legislative assembly. Langkawi refers to the cluster of about 100 over tropical islands lying off the north-western coast of the state of Kedah , on the Malaysian peninsular. The main island, popularly known as Pulau Langkawi or Langkawi island, is about 50 km from the town of Kuala Kedah on the peninsular.
